Is there a better feeling than catching your own food? Fisherman will tell you no and for this recipe, I agree. You don’t have to be into fishing to make this recipe but it sure does taste better when the ingredients are right from the nearest stream. If you don’t fish or aren’t near a location you can fish you can always pack out frozen or fresh fish depending on your ability to carry food items.

Ingredients:
1 tablespoon butter
8 ounces arugula, roughly chopped
1 small onion, thinly sliced
4 trout fillets (about 6 ounces each)
Salt and pepper
8 thin slices lemon
4 sprigs fresh thyme

Directions:

Rub the dull side of four large pieces of aluminum with butter. Arrange the arugula leaves in the center of each piece of foil place two or three slices of onion on top. Place the trout filets over the vegetables and sprinkle the fish with salt and pepper. Place two lemon slices and a thyme sprig on top. Fold corners of the foil over the fish and crimp edges to seal into a packet.

To cook, place packets on a grill grate or other platform set low over a hot fire. Cook for 6 to 8 minutes or until fish is flaky and opaque, arugula is wilted and onions are soft. Fish can be eaten right out of the packets or transferred to a plate. I prefer out of the foil.
