I cannot wait to get back into the outdoors and do some camping. Nothing better than waking up to a great breakfast from a campfire and seeing the sun crest the treetops. 

I have made today’s recipe on so many cooking surfaces it’s hard to keep track of them all. You can use anything that can handle the heat of fire and has a smooth surface. My favorite is a cast iron skillet but you can even use foil stretched over thick sticks in a pinch.

Because of the need to pack small and pack light I love using a premed mix for pancakes. My personal favorite is Kodiak Cakes Pancakes whole wheat mix. It’s delicious and portions of the proceeds go to save the bears. They have plenty of other options as well, so check them out at your local stores.

The recipe itself is stone simple, quite literally a caveman can do it. So yes, even us bikers can make it.

  • 1 Cup Mix
  • 1 Cup Water
  • Stir
  • Cook until done. (Lightly browned on each side.)

I have a camping multi spice container that has cinnamon as a major component. I use this in the mix to really add to the flavor. I really love pancakes first thing in the morning, it just sets the day on the right path.
