Campfire Recipes – One Eyed Jack

There are quite a few names for our breakfast themed campfire recipe. Kibbee Egg, hen in a nest, moon egg, cowboy egg, and one-eyed jack are just some of them. Simply put it is an egg in the middle of a piece of toast. In our case with the delicious addition of bacon!

Ingredients:
  1. Egg
  2. Frozen Texas Toast
  3. Bacon
Directions:

Place 1 halved bacon slice on a sheet of nonstick foil. Cut a hole in the center of 1 slice of thawed but still chilledTexas toast and place over the bacon. The chilled bread allows the bacon to cook but doesn’t overcook the egg. Crack an egg into the hole and fold the foil to seal. Repeat to make more and seal in in the individual foil packets. Grill over medium heat, covered, 8 minutes.

What you end up with is a messy breakfast that combines the best of everything breakfast has to offer. Make some coffee over the fire and you have the perfect start to your day.
